Chicken Fusilli with Swiss Chard


Tried this new dish for supper tonight. Tasted so healthy, I had to have a piece of chocolate after! I made it with double the amount of pasta and substituted with whole wheat pasta, next time I will give the regular past a try. Other than that, everyone at the table ate their whole meal.

CHICKEN FUSILLI WITH SWISS CHARD
INGREDIENTS
1 lb (500 g) swiss chard
2 boneless skinless chicken breasts
2 tbsp (25 mL) olive oil
1 onion, chopped
5 cloves garlic, minced
2 sweet red peppers, sliced
2 tbsp (25 mL) balsamic or red wine vinegar
1 tsp (5 mL) chopped fresh rosemary
4 cups (1 L) fusilli (12 oz/375 g)
4 tsp (20 mL) cornstarch
1-1/2 cups (375 mL) chicken stock
1/4 cup (50 mL) grated parmesan cheese

PREPARATION
Cut chard into ribs and leaves; chop each and set aside separately.

Slice chicken across the grain into 1/4-inch (5 mm) thick slices; cut crosswise in half. In large skillet, heat half of the oil over high heat; cook chicken, stirring often, for 4 minutes or until no longer pink inside. Remove from pan; keep warm.

Reduce heat to medium-high; cook onion, garlic, red peppers and chard ribs for 5 minutes or
until softened. Return chicken to pan. Add vinegar, rosemary and chard leaves; cover and cook, stirring occasionally, for 4 minutes or until chard is wilted.

Meanwhile, in large pot of boiling salted water, cook pasta for 6 to 8 minutes or until tender but firm; drain well and return to pot. Add chard mixture and toss to combine.

Whisk cornstarch into stock; add to skillet and cook over high heat, whisking, until thickened.

Stir into pasta. Serve sprinkled with Parmesan cheese.

Additional Information
.Substitutions: Instead of chard, you can use 1 bunch broccoli; add stems as directed and florets instead of leaves.
.To substitute crumbled dried rosemary for the fresh, use 1/4 tsp (1 mL) and add with onion.

A nice relaxing family Sunday.
Worked this morning doing a maternity shoot here at the house for Shylee & Dustin.
Cory has been working overtime lately, so it was nice to have him home for the entire day with us.
The kids are seen here in the background playing/reading so well together.

Tonight we celebrated Mom's belated birthday with dinner & cake at our place. Wish Mom's eyes were open for the shots I took, but they were closed the whole time. Anyways, she looks great {eyes open or not} with all her Grandkids. Happy Birthday Mom!!!

Mango Sorbet/Gelato taste test. I have been having a crazy craving for a mango iced treat lately. Tried these two versions. The Haagen-Dazs is my fave and way healthier than the Del Monte Gelato. But both were pretty yummy and hit the spot!

Quilting Class

I attended another great class tonight put on by the EFC, lead by Shelley Baldwin & Evelyn Lochart. These two women are novice quilters that live in the area and they were nice enough to lend us their expertice.
I brought the only project I've ever quilted with me, a crib quilt I made before Ace was born.
The finished project made in the class, a pot holder. So proud of how it turned out.

Today was a relaxing day before we headed back to Sask. We moved our belongings from Casa de Chibry over to my sister Amber's house, to stay with her overnight. Our friends Kelly & Ross invited us all over for lunch and a visit. Their little ones Kyran & Tianna have grown so much, it was great to see them all!
Relaxing and catching up on some rest at Auntie Amber's.

The two biggest Calgary Flames fans I know....Cory & Dee-Ann.

Thanks to these two, we were invited out for dinner & a hockey game...just when I thought we wouldn't get a date night in for January. Thanks so much guys for treating us to the game (and to Shelby for babysitting). We had a blast and it felt like old times.

We actually owe these guys and the entire Chibry family for re-arranging their schedule for the weekend to accommodate our last minute trip to Calgary. Even though our trip wasn't for happy reasons, these guys really went out of their way to make us comfortable, we had a good visit.
Felt great being in the 'Dome' again!
Love the sound of the puck and the smell of the ice in this arena.

And to top it all off, it was a really great game!

Couldn't leave Calgary without a visit with Cory's Grandparents.
They treated us to brunch; a tradition we had almost every Sunday when we lived in the city.

Memories of Hudson


Most of you who have followed me on my blog have heard of the tragedy we've experienced this week. Baby Hudson will be missed and forever loved. As Scarlett eyed up Kaeden's snack from across the table, I told him of Scarlett's ability to persuade others to share snacks. He was so nice to share his ice cream with Scarlett in her favorite frog bowl at the Chibry household.
