Another installment of Pasta Monday. Tonight we enjoyed rotini in a tomato sauce with red wine and muscles. And home-baked cheesy garlic bread...Yum!

Salsa making 2010 with my sisters today. 3 hours, fresh ingredients from local gardens, 20 jars...made for a fun afternoon AND some delicious salsa.

SNIDER SALSA
20 lbs tomatoes, steam and pull skins off, puree in food processor
20 jalapenos (we remove most seeds), chopped
4 onions, chopped
4 green peppers, chopped
4 cups peeled cubed zucchini
3 tbsp chili peppers
8 garlic cloves
1 cup vinegar
1 cup brown sugar
4 tbsp pickling salt
4 tbsp chopped cilantro or parsley
6 small cans tomato paste

- mix in a very large pot
- simmer 30 minutes or until vegetables are soft
- remove water from top if too runny
- jar
- can for 5 minutes

Took three of us 3 hours to make one batch, filled 20 500ml jars. You can eat immediately.

It's become a ritual to have Pasta Monday around here.
Tonight we enjoyed a bed of spaghetti smothered by alfredo sauce, grilled shrimp, cherry tomatoes, fresh mushrooms & crispy bacon. Accompanied by a salad of greens, slices of pear with a balsamic vinaigrette.

LEGO PARTY for Ace's 6th Birthday

Today we had our first 'kids-only' party...just Cory & I with 10 of Ace's little friends. We were so impressed by how smooth the party went and Ace had a BLAST!

Things have been going really well since Coco was born. I have been feeling great, was back feeling like myself the day after she was born. She has been a great baby! Sleeping for long periods of time, eating well & just goes with the flow of things around here. I caught myself saying I might want another baby after this one....well maybe, we'll see. But for now, we'll continue to enjoy this little sweetheart!

Finished Fence

Thanks to my in-laws, who were here for a visit from Alberta, the fence is done...yay! Cory and his helpers did a great job and it's another item crossed off the list of tasks TO-DO around the house.
A request I made to have these wrought-iron inserts made as windows into the two gates we have...Cory pulled it off perfectly.

Loving that our kids & dog can now run free & play in the backyard.
