Banana Chip Muffins
1/2 cup margarine
1 cup sugar
2 eggs
3 ripe bananas
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 salt
3/4 cup chocolate chips
Cream butter & sugar together using an electric mixer. Add eggs one at a time, beating until smooth. Blend in mashed bananas. Add all dry ingredients to banana mixture, stirring only to moisten. Fold in chocolate chips. Transfer to muffin tins (I use stoneware, no greasing necessary). Bake @ 350 degrees for about 1 hour, or until inserted toothpick comes out clean. Let stand for 10 minutes. Remove from pan and place on cake rack to cool. Makes 12 muffins.
