Salsa making 2010 with my sisters today. 3 hours, fresh ingredients from local gardens, 20 jars...made for a fun afternoon AND some delicious salsa.

SNIDER SALSA
20 lbs tomatoes, steam and pull skins off, puree in food processor
20 jalapenos (we remove most seeds), chopped
4 onions, chopped
4 green peppers, chopped
4 cups peeled cubed zucchini
3 tbsp chili peppers
8 garlic cloves
1 cup vinegar
1 cup brown sugar
4 tbsp pickling salt
4 tbsp chopped cilantro or parsley
6 small cans tomato paste

- mix in a very large pot
- simmer 30 minutes or until vegetables are soft
- remove water from top if too runny
- jar
- can for 5 minutes

Took three of us 3 hours to make one batch, filled 20 500ml jars. You can eat immediately.

SO jealous!!! Our tomatoes are barely ripe enough to make a batch of salsa, and from I hear tomatoes rotting before they ripen is a problem this year!
Do you guys like spicy salsa? We like to make spicy salsa and surprisingly the kids seem to enjoy it too
